Easy Banana Oatmeal Pancakes
These are so easy and delicious and depending on your choice of topping, quite a healthy start to the day.
Ingredients: 1 1/2 cups of oats or oatmeal
2 bananas
1 tablespoon of maple syrup
2 eggs plus one egg white ( for extra fluffiness beat this egg white and fold in at the end)
2 teaspoons of baking powder
1/2 cup of almond milk ( unsweetened )
Tiny pinch of Himalayan salt
Instructions: Place all the ingredients into a blender and blend until smooth.
Heat a small amount of butter or coconut oil in a pan and once heated scoop small ladel's of the pancake mixture into the pan.

They will cook quickly so keep your eye on them. Once you begin to see tiny bubbles on the surface flip them over.
Serve immidiatley with your choice of topping. My boys like just a sprinkling of icing sugar but they are also delicious with maple syrup or fresh fruit. Make double the quantity and keep in the fridge to enjoy the next day!
